It's not Thai tea that reminds me of home, but hot bael fruit tea. The distinct, smokey aroma and a tiny hint of sourness makes this tea my comfort drink.

Toasting bael fruit brings out the flavor packed in the dry fruit. Once, I thought I needed a short cut and eliminated the toasting step, but my tea was dull. You can make this tea in a big pot and have it throughout the day.

Toast bael fruit either on a grill over your stove or toast it in a toaster oven . Either way, it should take no more than one minute. There will be some burnt parts.

There are two styles of Thai iced tea: with or without milk. Tea with milk is called cha yen. Tea without milk is called cha dum yen.

You will see small coffee/tea shops sprinkled all over Thailand. However, unlike in the US or Europe, Thai people like their iced tea on the go and take it with them in a small plastic bag with a straw sticking out. Very few people sit at the shop and drink it leisurely. In fact, many shops have no place to sit.

Note: There seems to be a confusion about Thai tea.  This recipe is Thai tea from Thailand, not Indian chai from India.
